Aspire 2005 Pinot Noir

This wine has been nurtured from vineyard to bottle to produce an attractive Pinot Noir with soft, supple tannins and lovely ripe red berry characters. The new French oak component adds complexity and interest to the palate

Management

The individual batches of fruit were harvested at optimum ripeness and flavour between the 14th of March 2005 and the 29th of March 2005. The grapes were sourced from our Gimblett Road vineyard and also from our Tuki Tuki vineyard. 
Brix 22.0 – 23.5   pH 3.40 – 3.65    TA 7.50 – 9.00g/l 

Vinification

All the different clones of Pinot were hand picked separately and kept separate until blending. The grapes were gently destemed into fermentation vessels. Some batches were cold soaked for 7-10 days after which the vessels were inoculated with a specially selected Burgundy yeast. Fermentation temperature peaked at 30C and lasted 7 days before being traditionally pressed through a Basket Press. Malo-lactic fermentation was carried out in barriques and the wine was matured in barrels for 12-15 months prior to bottling.

Composition

100 % Pinot Noir. 84% from our Gimblett Gravels Vineyard, 26% from our Tuki Tuki Vineyard. Both vineyards are situated in Hawke’s Bay

Sensory

Colour: Cherry red in colour.  
Aroma: Delicious varietal nose displaying cherry and strawberry notes intermingled with cedary spice and subtle earthy tones.  
Palate: This wine has been nurtured from vineyard to bottle to produce an attractive Pinot Noir with soft, supple tannins and lovely ripe red berry characters. The new French oak component adds complexity and interest to the palate.
