Wine Note

The Riesling grapes were handpicked from our Gimblett Road vineyard with about 50% of the bunches infected with botrytis.  
This is a luscious wine displaying good acid balance with divine honey and sweet citrus flavours and a smooth fresh finish. 
A wonderful treat to have with cheeses or bbq pineapple with a buttery rum sauce. (RS 117g/L)

Vinification

The grapes were gently destemmed and crushed and soaked on skins overnight. Tbe following morning the grapes were presss and the juiice partially settled. The juice was innoculated with a selected yeast and fermentation was conducted in tank. The temperature was kept cool to retain flavour and control the ferment which was arrested at 100 g/l residual sugar.
