Wine Note 100% Matariki Gimblett Gravels Hawkes bay Pinot Noir Fruit 100% Pinot Noir Alcohol Content 14% Soils 100% Gimblett Gravels Management Both clones were hand picked gently destemmed and crushed to tank, to this we added 5% whole bunches. Harvest After a warm dry February the Pinot Noir from these specific blocks was harvested in early March 2002. The berries and bunches were tight and small and clean. Vinification We cooled the fruit down to 10 degrees for one week before warming the tank and innoculating with a selected yeast. After ferment we basket pressed and put the wine directly into French barriques. The wine completed malo in barrel and was racked off after 11 months. Composition Matariki Gimblett Gravels Hawke's Bay Pinot Noir Barrel Percentage 73% New French Oak Bottling This wine was bottled on the 21st August 2003 Sensory Deep cherry red colour.
