100% Hawke’s Bay Sauvignon Blanc, this wine shows ripe passionfruit and delicate tropical fruit aromas and hints of gooseberry. Delicious fresh wine with a lovely balance of acid and fruit sweetness. The finish is lively and lingering. Perfect to have as an aperitif or with pan fried snapper or tempura oysters..

Harvest

The grapes were hand selected when flavour, sugar and acid were at an optimum from our vineyard blocks located on Gimblett Road. The fruit was in excellent condition at harvest.

Vinification

Some of the fruit for this wine was cold soaked for a few hours before being pressed. This helped to heighten the aromatic flavours of the wine. Other batches were put directly to press and were whole berry pressed before being cold settled. All the pressings were kept separate until the final blending. The juice was racked off lees and inoculated with selected yeast to enhance the natural characteristics of Sauvignon Blanc. Fermentation was controlled and the temperature was maintained between 12-15 degrees. After fermentation the wine was left on yeast lees for 3 months to add some richness and texture to the wine. Prior to bottling the wine was blended, fined, stabilized and filtered.

Colour: Straw with green tinges and brilliant clarity 
 
Aroma: Ripe passionfruit with complex delicate tropical fruit aromas and hints of gooseberry. 
 
Palate: Delicious fresh wine with a lovely balance of acid and fruit sweetness. The finish is lively and lingering. Perfect to have as an aperitif or with seafood and salads. 

Cellaring

Drink now or cellar for 1-2 years.
