Matariki 2003 Sauvignon Blanc

Harvest

The grapes were hand selected from our vineyard blocks located on Gimblett Road. The fruit was in excellent condition at harvest.

Vinification

The grapes were whole berry pressed and the juice was cold settled. The juice was racked off lees and inoculated with yeast. Fermentation was controlled and the temperature was maintained between 12-15 degrees. After fermentation the wine was left on yeast lees for 3 months. Prior to bottling the wine was blended, fined, stabilized and filtered.

100% Hawkes Bay Sauvignon Blanc

Sensory

Colour: Green tinged with brilliant clarity 
 
Aroma: Ripe passionfruit with complex tropical fruit aromas 
 
Palate: Youthful, tightly structured wine with pure fruit flavours, and lively acid finish.

Cellaring

Drink now or cellar for 1-2 years.
