Aspire 2002 Syrah

100% Syrah

Harvest

A slow and prolonged ripening period was perfect for the Syrah and enabled the fruit to reach full maturity. The grapes were hand picked in pristine condition at harvest.

Vinification

The grapes were destemed and gently crushed into fermentation vessels. Some batches were cold soaked before primary fermentation. The must was inoculated with yeast and fermentation was conducted on skins for 10-14 days. Some batches were left on skins after fermentation for up to 20 days. 
The skins were pressed and MLF occurred in barrel. On the completion of MLF the wine was racked, sulphured and returned to barrel for 15 months. The wine was racked and returned 3 times. Prior to bottling the wine was lightly fined with eggwhites, chilled and filtered.  

Sensory

Colour: Opaque with purple hue 
 
Aroma: Complex, displaying pepper and red currant aromas and subtle oak. 
 
Palate: Soft, round and very approachable now. Intense fruit flavour and silky smooth tannins lead to a smooth sweet finish.   

Cellaring

This wine is ready for immediate consumption or cellar for 2-3 years.
