Fruit 100% Syrah Harvest A slow and prolonged ripening period was perfect for the Syrah and enabled the fruit to reach full maturity. The grapes were hand picked in pristine condition at harvest. Vinification The grapes were destemed and gently crushed into fermentation vessels. Some batches were cold soaked before primary fermentation. The must was inoculated with yeast and fermentation was conducted on skins for 10-14 days. Some batches were left on skins after fermentation for up to 20 days. Sensory Colour: Opaque with purple hue Cellaring This wine is ready for immediate consumption or cellar for 2-3 years. |
