Fruit 100% Chardonnay Alcohol Content 13.0% Harvest Mild to warm and dry weather conditions enabled the Chardonnay fruit to reach full maturity. The grapes were hand harvested at optimum flavour levels. Vinification The fruit was whole bunch pressed and the juice was separated and settled. After settling the juice was racked off lees and inoculated with yeast for fermentation. The fermentation lasted about 3-4 weeks and all ferments were fermented dry. Some of the blend was fermented in seasoned French oak barriques. The wine was left on yeast lees with weekly stirring for 6 months. About 50% of the blend went through malo-lactic fermentation. Prior to bottling the wine was blended, fined and stabilized. Bottling This wine was bottled in October 2003. Sensory Colour Cellaring This wine is ready for immediate consumption or cellar for 2-3 years. |
