Matariki 2002 Sauvignon Blanc

Wine Note

After gentle pressing this wine was given a prolonged and cool fermentation to retain the lovely fruit characters. This wine is deliciously intense displaying tropical fruits of pineapple and melons. Best served slightly chilled as an aperitif or with light salads and seafood.

Harvest

The grapes were individually selected from our vineyard blocks on Gimblett Road. The mild and relatively cool weather during veraison enabled the grapes to reach full maturity.

Vinification

Individual blocks and sections were harvested separately and kept separate until blending. The grapes were whole berry pressed and the lighter pressings were separated from the harder pressings. The juice was cold settled and warmed for fermentation. The juice was inoculated with yeast and fermented cool in stainless steel tanks. Fermentation lasted about 3 weeks. The wine was left on light lees for 3 months prior to blending. Before bottling the wine was fined, stabilized and filtered.

4% Gimblett Gravels Semillon

Bottling

This wine was bottled on the 2nd of October 2002

Sensory

Colour: Pale straw with brilliant clarity. 
Aroma: Intense tropical fruits of pineapple and melons. 
Palate: Firmly structured wine displaying fine acid balance and intense tropical fruit flavours.

Cellaring

Drink now or cellar for 1-3 years.
