Harvest

Vinification

The grapes were gently destemed and crushed and held on skins overnight.  The next day the skins were pressed and the juice was settled.  Fermentation was conducted in stainless steel tanks.  The temperature was controlled and kept cool to retain fruit flavours.  fermentation was arrested at about 10 brix.  The wine was racked off gross lees and was aged in French barriques for 2 months.  After aging the wine was fined, stablised and filtered.
