Alcohol Content 11% Harvest The grapes were hand harvested on two separate occassions, 15 March 2001 and 1 May 2001. The fruit was selected and sorted in the vineyard. The fruit had approximately 30-40% botrytis affection. Vinification The grapes were gently destemed and crushed and held on skins overnight. The next day the skins were pressed and the juice was settled. Fermentation was conducted in stainless steel tanks. The temperature was controlled and kept cool to retain fruit flavours. fermentation was arrested at about 10 brix. The wine was racked off gross lees and was aged in French barriques for 2 months. After aging the wine was fined, stablised and filtered. Composition 100% Riesling from Gimblett Road. Bottling The wine was bottled on the 26 September 2001. Sensory Colour: Medium yellow with golden hue and brilliant clarity. Cellaring 3 - 5 years. |
