Matariki 1999 Reserve Sauvignon Blanc

Harvest

The grapes were all harvested from the Stony Bay vineyard. A small portion of the fruit was hand picked and whole bunched pressed. The balance was machine harvested. The fruit was harvested at optimum ripeness and optimum flavours. 
Harvest date: 04/03/99.  

Vinification

The hand picked grapes were whole bunched pressed and fermented in barrels. The machine fruit was fermented in tank and a few barrels. Some of the blend was transferred to barrels after fermentation for aging and maturation. 55% of the blend was barrel fermented. After blending the wine was put into tanks. The wine was filtered, fined with casein, bentonite and Pvpp. The wine was cold stabilized and fine earth filtered. The wine was sterile filtered into the bottle.

Bottling

The wine was bottled on the 20th December 2000.

Sensory

Colour: Mid straw in colour with brilliant clarity and green hue. 
Aroma: Integrated fruit and oak spices underlined by ripe tropical fruits with a hint of toast. Touch of buttery, leesy characters from lees contact and MLF. 
Palate: Weighty lucious wine with strong grapefruit flavours complexed with refined French oak. Balanced acid and sugar on the palate leads to a soft lingering finish. 
Excellent food wine. 

Cellaring

Ready for immediate consumption but will benefit from a further 2 to 3 years cellaring.
