Matariki 2000 Reserve Sauvignon Blanc

Harvest

The grapes were hand harvested from our Gimblett Road vineyard.  The fruit was picked on flavour and fruit analysis.

Vinification

Separate batches were individually selected in the vineyard and processed separately.  The grapes were whole berry pressed.  The juice was settled and the clear juice was racked off lees to fermentation vessels.  A portion of the blend was barrel fermented.  The finished wine had 12% malo-lactic fermentation.  On completion of maturation the wine was racked, blended, fined with casein and bentonite, cold stabilised and sterile filtered into the bottle.

Sauvignon Blanc 96% 
Semillon 4%

Bottling

The wine was bottled 22 December 2000.

Sensory

Colour:  Medium straw with green hue and brilliant clarity. 
Aroma:  Complex aromas of passionfruit and citrus with spicy overtones. 
Palate:  Medium bodied with balanced acid.  Ripe fruit flavours are complexed by delicate nuances of spice from aging in oak.  Very good palate structure with added weight and length coming from aging on lees and a small amount of MLF.  A subtle toasty finish.

Cellaring

This wine will continue to develop in the bottle for the next 3 - 5 years.
