Vinification

All the different clones of Pinot were handpicked separately and kept separate until blending. The grapes were gently destemed into fermentation vessels. The grapes were cold soaked for 7-10 days after which the vessels were inoculated with a specially selected Burgundy yeast. Fermentation temperature peaked at 30C and lasted 7 days before being traditionally pressed through a Basket Press. Malo-lactic fermentation was carried out in barriques and the wine was matured in barrels for 12 months prior to bottling.

Composition

80.6% from our Gimblett Gravels Vineyard in Hawke’s Bay, 19.4% Martinborough fruit.

Barrel Percentage

47% new French oak, 42% 1 and 2 year French oak, 11% older French oak.

Sensory

Cherry red in colour. Distinct cherry and strawberry aroma with underlying layers of oak spice and earthy notes.The combined care in the vineyard and the gentle handling in the winery has produced a pinot with supple soft tannins, rich red fruits and a balanced long finish.  

Cellaring

This wine is ready to be opened now but will also improve with 3-4 years development in the bottle.
