Stony Bay 2005 Sauvignon Blanc

Fresh and aromatic with an intense grassy capsicum aroma with hints of tropical fruits.

Vinification

The grapes were harvested in the early morning to have the fruit as cool as possible. Some batches were left for 6-8 hours to cold soak to maximize the aromatics from the skins, other batches were pressed directly. The hard pressings were kept separate and treated slightly differently to the free run. All the juice was cold settled and racked before being inoculated with a selected yeast. The fermentation was conducted at cool temperatures between 13-16°C. Post fermentation the wine was racked off gross lees and then left on light lees with weekly stirring to add some texture and complexity. The wine was blended, fined and filtered before being bottled.

82% 2005 Hawkes Bay Sauvignon Blanc, 18% 2005 Semillon

Bottling

This wine was bottled on the 9th of February 2006.

Sensory

Pale straw colour with a green hue and brilliant clarity.Fresh and aromatic with an intense grassy / capsicum aroma with hints of tropical fruits. A dry wine showing intense flavours typical of the variety. The finish is well balanced with lively acidity and a slight sweetness from the residual sugar. 

Cellaring

This wine is ready for immediate consumption but will continue to develop with bottle age.
