Wine Note Fresh and lively Sauvignon Blanc displaying typical fruit characters of the variety, with a lovely crisp natural acidity. Great served with chicken, fish and salads. Fruit Hawkes Bay Sauvignon Blanc Alcohol Content 13.0% Harvest The mild and relatively cool weather during veraison were perfect for enabling the Sauvignon Blanc from our Gimblett Road Vineyard to reach optimal ripeness levels. Vinification The grapes were harvested and taken to the winery. The fruit was whole berry pressed and the harder pressed juice was separated from the free run. The juice cold settled overnight. After settling the juice was racked and inoculated with yeast. Fermentation was conducted cold to retain fruit flavours and lasted approximately 3 weeks. Just prior to completing fermentation the wine was racked off heavy yeast lees and left to settle on light lees. After 3 months on light lees the wine was blended, fined, stabilized and filtered prior to bottling. Composition 2002 Hawkes Bay Sauvignon Blanc 94% Bottling This wine was bottled on the 25th of September 2002. Sensory Colour: Pale straw with a green hue and brilliant clarity. Cellaring This wine is ready for immediate consumption but will continue to develop and complex with some bottle age. |
