Wine Note Sauvignon Blanc from our Gimblett Road vineyard was hand harvested, gently pressed and partially barrique fermented. This wine displays an intense aroma of passionfruit and citrus. Lees stirring and some malolactic fermentation has added a richness to the finish. Alcohol Content 12.6% Harvest The grapes were hand picked at optimum ripeness. Individual batches were selected and processed separately at the winery. Vinification The grapes were whole bunch pressed. No crushing of the fruit. Some of the juice went straight to barrels and underwent a wild yeast fermentation. The balance was settled and racked to tank for fermentation. The fermentation temperature was cool to retain fruit aroma and flavours. A portion of the juice was transferred to barrels and completed fermentation in barrel. Some of the barrels underwent malo-lactic fermetnation in the barrel. All barrels and tanks were left on gross lees with weekly stirring for 8 months. After maturation the wine was blended, fined and stabilized prior to bottling.
