Matariki 2001 Sauvignon Blanc

Wine Note

Selected parcels of fruit were harvested at optimum ripeness.  After gentle pressing the juice was given a cool and prolonged fermentation resulting in a full flavoured wine.

Harvest

The grapes were harvested from our Gimblett Road vineyards. The cooler weather during veraison enabled the grapes to retain a good natural acidity. Individual lots of fruit were harvested and vinified separately. The grapes were machine harvested and whole berry pressed. Some batches were hand picked and whole bunch pressed.

Vinification

The grapes were whole berry pressed. The harder pressings were separated and kept separate. The juice was settled to remove the solids and then the clear juice was racked to a fermentation tank. The must was inoculated with yeast and fermetnation was conducted cold to retain fruit aromas and flavours. Fermentation lasted 14-20 days. On completion the wine was chilled to 10C and left on gross yeast 3 months. The wine did not undergo malo – lactic fermetnation. Prior to bottling the wine was blended, fined, stabilized and filtered.

94% Gimblett Road Sauvignon Blanc 
6% Gimblett Road Semillon

Bottling

The wine was bottled on 28th September 2001

Sensory

Colour: Straw with bright green hue and brilliant clarity. 
Aroma: Fruit driven wine displaying grapefruit and citrus aromas complexed by herbaceous overtones. 
Palate: Elegant and tightly structured wine. Fresh and weighty mouthfeel with strong grapefruit flavours and a crisp dry finish.
