Stony Bay 2001 Sauvignon Blanc

An elegant New Zealand Sauvignon Blanc to be enjoyed with seafood, white meats, spicy foods or cheeses.

Harvest

The grapes were harvested at optimum ripeness and flavour.  Individual parcels of fruit were kept separate until blending.  The long and relatively cool ripening period produced fruit with strong varietal flavours and good natural acidity.

Vinification

Some batches were hand picked and others were machine harvested. The fruit was whole berry pressed and the cut was made on taste and juice analysis. The harder pressings were fined and added back. Fermentation was in tank. The temperature was kept cool to retain flavour. The wine was fermented dry and aged on yeast lees in tanks for a couple of months. After aging the wine was blended, fined and stabilized prior to bottling.

2001 Sauvignon Blanc 85%.  
2001 Other 15% 

Bottling

The wine was bottled on the 3/10/01.

Sensory

Colour: Straw with green hue and brilliant clarity. 
Aroma: Clean with tropical / flowery characters 
Palate: Crisp and fresh. Good palate weight with delicate tropical flavours. Dry finish. 

Cellaring

Ready to consume now but will continue to develop in bottle for 1 - 2 years.
