Wine Note Intense ruby coloured with purple tints. This wine has an inviting bouquet of chocolate, spice and dried fruits. The palate is deliciously mouthfilling showing typical characters of red berry fruits and dried orange peel. The finish is fresh, long and lively. A perfect accompaniment to Italian cuisine. Alcohol Content 13% Alc %v/v Harvest The grapes were harvested on the 21st April 2006. Vinification The grapes were gently destemmed and crushed in to tanks for fermentation on skins. The must was inoculated with selected yeast and fermented for approximately 7 days, reaching a maximum temperature of about 32°C. The ferment was pumped over 3 times per day during the height of fermentation, gently extracting colour, flavour and tannins. Post fermentation the wine was drained and the remaining skins were pressed out. The free run wine and the pressings were combined and put to barrel to complete malolactic fermentation. During the 18 months the wine spent in barrel it was racked 3 times. A portion of Cabernet Sauvignon is traditionally blended to enhance the structure and mouthfeel of the wine. The wine was fined and filtered pre bottling. Composition 86% Gimblett Gravels Hawkes Bay Sangiovese Blend Composition The wine was matured in 70% new and 30% seasoned French barriques for 18 months.
