Matariki 2008 Sauvignon Blanc

Wine Note

A lively wine bursting with ripe tropical fruit flavours and a fresh herbal edge. Delicately succulent with tangy acidity, attractive mineral notes and a harmonious long finish.

Harvest

The grapes were harvested when flavour, sugar and acid were at an optimum from our vineyard blocks located in Hawke’s Bay.

Vinification

Some of the fruit for this wine was cold soaked for a few hours before being pressed. This helped to heighten the aromatic flavours of the wine. Other batches were put directly to press and were whole berry pressed before being cold settled. All the pressings were kept separate until the final blending. The juice was racked off lees and inoculated with selected yeast to enhance the natural characteristics of Sauvignon Blanc. Fermentation was controlled and the temperature was maintained between 12-15 degrees. After fermentation the wine was left on yeast lees for 6 weeks with weekly stirring to add some richness and texture to the wine. Prior to bottling the wine was blended, fined, stabilized and filtered.
