Wine Note An elegant Chardonnay with lovely toasty French oak aromas which lead in to a richly textured, complex palate. White stonefruit and citrus are combined with creamy, slightly biscuity flavours to give a harmonious wine with a lingering finish underscored with an attractively fresh Alcohol Content 13.5 %v/v Harvest The grapes were hand picked according to flavour and ripeness between the 20th and 26th of March. Vinification Individual blocks and clones were hand selected and picked, then whole bunch pressed. Some of the juice was run directly from the press to barrels and was left to go through a wild fermentation. This wild ferment component was 54% of the final blend. The rest of the juice was lightly settled and then racked to tank for fermentation. Fermentation was initiated in tank and then the fermenting must was transferred to new and 1 year old French oak barrels. The blend received approximately 54% malolactic fermentation and was left on gross lees in barrels with weekly stirring for 11 months. Prior to bottling the wine was stabilized and filtered. Composition 100% Matariki Gimblett Road Vineyard Chardonnay, 85% Clone 15 and 15% Mendoza Barrel Percentage 92% New French oak barriques, 8% seasoned French barriques Bottling The wine was bottled on the 12th of March 2007. |
