Wine Note A deliciously fresh Chardonnay with ripe fruit flavours and a beautifully balanced palate. Light, oak influenced complexing characters arise from lees stirring and maturation in French barriques Fruit 100% Matariki Hawkes Bay Chardonnay Alcohol Content 13.5% Vinification The individual batches of grapes were processed separately. Some of the fruit was whole bunch pressed if it was hand picked while a portion of it was machine harvested so it was whole berry pressed. The juice was settled overnight and then racked to tank to be inoculated with selected yeasts. Some batches were fermented in tank until about half of the sugar had been fermented and then cooled and put to barrel for partial barrel fermentation. A selection of seasoned French oak was used for fermentation and for aging. The partially barrel fermented portion was left on gross lees and stirred weekly to increase texture and mouthfeel. The wine was aged in barrel for 10 months. The wine was blended, then fined and filtered prior to bottling. Composition 100% Matariki Hawkes Bay Chardonnay Barrel Percentage Lightly oaked in 1 year old seasoned barrels and those 2 years or older, for a period of 9-10 months.
