Wine Note Released 9th December 2003 Fruit Chardonnay Alcohol Content 13% Vinification The grapes were whole bunch pressed. The juice was cut and the harder pressings were kept separate. The juice was inoculated with yeast and fermented in tank and seasoned barriques. The wine was left on lees for 7 months. There was no malolactic fermentation. After maturation the wine was blended, lightly fined and stabilized prior to bottling. Secondary fermentation occurred in the bottle. Composition 27% Hawkes Bay Clone 2-23 Chardonnay Disgorging The bottles were disgorged after 20 months on lees. Barrel Percentage Oaked in seasoned french oak barrels Bottling Bottled in February 2002 Sensory This Blanc de Blanc has a lively and fresh approach with a lovely bouquet of apples and citrus fruits combined with brioche and nutty overtones.
