Harvest

A delicious Chardonnay from the excellent 2006 Vintage. The fruit for this Chardonnay was sourced from our two Vineyards in Hawke’s Bay. Matariki has approximately 6 hectares of Chardonnay planted on the Gimblett Gravels and another 2 hectares planted in the Tuki Tuki Valley. The 2006 vintage struck an optimal balance between flavour, ripeness and acidity producing a Chardonnay showing finesse and varietal character

Vinification

The individual batches of grapes were hand picked and processed separately. The fruit was whole bunched pressed and lightly settled. Some batches were fermented in tank until about half the sugar had fermented and then cooled and put to barrel to finish fermentation. The juice was fermented in new and 1-2 year fine grain French Barriques from a variety of high quality Coopers. The wine underwent Malolactic Fermentation in barrel with approximately 20% of the wine being inoculated. Each barrel was lees stirred weekly for 8 months, aging in barrel for a total of 10 months before being bottled.
