Matariki 2005 Syrah

Wine Note

Intense ruby in colour with a soft purple hue. The aroma has a complex mix of pepper, spice and dark ripe blackcurrants with hints of clove and cedar. Stunning ripe dark berry flavours with a suggestion of game and savoury notes on the pallet. Beautifully balanced with firm velvety tannins and a lingering finish. 

Harvest

The grapes for this wine were hand picked between the 6th and 22nd of March 2005 at optimum flavour and ripeness.  
Brix 22.0-24.00    pH 3.35-3.45   TA 7.15-8.85g/l

Vinification

The grapes were hand harvested and then destemmed and gently crushed into fermentation vessels. Some vessels were open top fermenters so the ferments were gently plunged four times a day, otherwise they were pumped over three times per day at the height of fermentation. Some batches were cold soaked to extract colour and flavour from the skins then the must was inoculated with a selected yeast. After fermentation the wine stayed on skins for approximately 2 weeks before being pressed out and inoculated for malolactic fermentation. Post malolactic the wine was put to barrel for 18 months and during this time was racked 4 times. Prior to bottling the wine was lightly fined with egg whites and filtered.

100% Matariki, Hawkes Bay, Gimblett Gravels Syrah

Barrel Percentage

The wine was aged in 50% new and 50% seasoned French barrels for approximately 18 months.

Bottling

This wine was bottled on the 20th of February 2007.  
PH 3.50    TA 6.60g/l    RS dry    ALC 13.5%v/v

Sensory
